It’s officially the holiday season! Who doesn’t adore this time of year? It’s so easy to get carried away with all the holiday decorations and gift shopping. However, a holiday-ready home is in need of one thing: cookies. Aside from the fact that they’re a necessity for Christmas, these cookies specifically are absolutely heavenly! Hot cocoa is delicious in itself, so in cookie form, it’s even more unreal. Not to mention, your kids won’t get enough of these sweet treats, believe us. The brownie-like cookies topped with marshmallows and chocolate icing will be a hit with everyone. You can bring them along to holiday parties or give them as a gift! Believe us when we say, they’ll be gone before you know it. As if that wasn’t enough, these cookies are so simple to make! They don’t require any fancy equipment or skills that complicate things. What You’ll Need:
For the cookies:
- 1/2 cup unsalted butter 1 stick
- 12 oz semi-sweet chocolate
- 1 1/2 cups flour
- 1/4 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/4 cups brown sugar
- 3 eggs
- 1 1/2 teaspoons vanilla extract
- 25 large marshmallows approximately
For the icing:
- 2 cups powdered sugar
- 4 tablespoons unsalted butter (1/2 stick, melted)
- 1/4 cup unsweetened cocoa powder
- 1/4 hot water
- 1/2 teaspoon vanilla extract
How To:
- In a medium-sized saucepan, melt the butter and chocolate, stirring it frequently. Once it’s melted, set it aside to cool a little.
- In a medium bowl, whisk the flour, cocoa powder, baking powder, and salt together.
- In the electric mixer’s bowl, beat the sugar, eggs, and vanilla on a low speed until they’re all combined.
- Add the cooled chocolate mixture and blend everything until it’s just combined.
- While it’s mixing, add the flour mixture in gradually until everything is blended. Make sure to scrape down the sides of the bowl so it’s all mixed.
- Cover the bowl and refrigerate it for an hour at least. The dough will firm up as a result.
- Preheat the oven to 325F (165C) before lining two baking sheets with parchment paper. Using a tablespoon, scoop the dough onto your hand before rolling each scoop into a ball and placing it on the pan. Make sure to leave about 2 inches in between each cookie and flatten them a little.
- Bake the cookies for roughly 12 minutes. While they bake, you can make the icing.
- Cut the marshmallows in half. When the cookies come out of the oven, press half a marshmallow onto each one, cut side down. Then, return the cookies to the oven for another 2-3 minutes. Once they come out, allow the cookies to cool for several minutes before placing them on a cooling rack.
- For the icing, combine all the ingredients in a medium bowl before whisking it all together. Put the wire cooling rack with the cookies onto a piece of parchment paper to catch any excess icing. Spoon a little icing onto each marshmallow before using the spoon to slightly spread the icing. Allow the icing to set for about 30 minutes before serving.
